So We Gotta Get a Commissary…What in the Heck is a Commissary?

     According to the Elmore County Health Department, a Commissary is: “a permitted food establishment to which a mobile food unit (in our case, our hotdog cart) returns on a daily basis for such tasks as discarding liquid and/or solid waste, refilling water tanks and ice bins; storage of utensils food and single-service items and for loading food.“ So, the search was on. After two solid weeks of appointments and rejections, we finally got us a commissary! I would have never thought that commissary negotiations would involve brunch on a Sunday morning…it’s a tough job, but hey, somebody has to do it. 🌭
